Works great!During this pandemic episode we're experiencing, I've had the devil's own time finding Fleishmann's Rapid-Rise Yeast for my "sit overnight" bread recipe. While I wasn't sure about this, I thought it would be worth a try. I prepped a bowl of dough last night around 7 p.m. and, 12 hours later, voila! The dough had risen just as it would have with Fleishmann's! It baked up beautifully, too. Glad I got this ... and thought I would mention it works for bread, just in case other bakers out there are wondering the same.Everyone stay safe and be well.This stuff goes full tilt crazy as soon as you pitch it. My god the energy level of these mighty little titans makes you understand why the only live a few days! Here's the deal...this yeast is fast and great for carbonating. As for your refined wine crafters, this yeast does not stay active long enough to convert all sugar and produce maximum flavor.So it is a great carbonating yeast that will produce a fizzy medium alcohol beverage in about 6-8 days. But if you are not in a hurry and want max flavor, there are more suitable yeast from Red Star.I am using this yeast to carbonate homemade soda and the yeast really takes off! There does appear to be some suspension of the yeast in the bottles that requires careful pouring but carbonates great and so far (only one batch at this point) there is no yeast flavor in the final product.I have been using Red Star's Premier Cuvee for over 15 years. The yeast works very well. I usually store it in my refrigerator, as I ferment my wine only 3-4 times a year. But I can leave it in my refrigerator for 9-10 months and then use it -- and it works brilliantly.Although one package is good for 5 gallons, I usually use 2 packages for my 6.5 gallon fermenter. Over the years, I think I had only one slow start from this type of yeast. It yields between 13 - 16% alcohol. The time varies from 3.5 weeks to 5 weeks (depending on the temperature in the house).This is my new favorite white wine yeast. It tends to slow down a bit quicker than other wine yeasts (towards the end of fermentation) but it makes up for the time by vigorously fermenting early on. I think this yeast has a less yeasty flavor than many other wine yeasts too. It works great for distilling too.Arrived in Nov of 2019 with a December 2022 expiration stamped on every package. That's OVER 3 years of shelf life. The Red Star/ Lesaffre website says 3 year shelf life, so this must be straight from the factory.I won't comment on the flavor or performance of this yeast, it's world famous and industry leading, that info is all available on the web.Very satisfied.I use this stuff for carbonating beverages like ginger beer, soft apple cider, etc. In 24-48 hours it does the trick nicely. It's a very clean yeast, not foamy, and does not noticeably change the flavor after a short ferment. Be careful - this yeast works fast. A refrigerator slows it down a lot, but does not totally stop it. You'll want to drink any bottles containing live yeast within a couple weeks, or the pressure will get too high.I had never used this yeast to ferment anything all the way to dryness before, but decided to try it with a small batch of cider. 1 month into the ferment, it's looking pretty good.This is really a superb product. I could easily achieve 16% to 18% ABV in my batches. There is absolutely no off- flavour even if you get late in Racking. And the pungency of alcohol taste is already so rounded, I wonder whether it will be even perceivable after aging.Those who are targeting high ABV like 16 or above should be careful. It really becomes too strong a drink after 14%. So keep the sugars low for lower ABV.I bought this primarily for three qualities claimed in net literature1) Temperature range from 7 to 35 degree centigrade2) ABV upto 18%.3) No off flavours.2nd & 3rd point have proven to be true. 1st point will be verified in peak winter and summer.Though I haven't used Lalvin 1118 - which is same (as per met literature) as Premier Cuvee, regarding Alcohol percentage & Temperature range, but Cuvee seems to be better than it in two aspects:1) Lower Price2) Lower or negligible Fusel alcohols & off flavourActually, 2nd point here will be better verified in summers.It's pricy but well the results are amazing if you are looking for quality yeast for home brewingExcellent product for wine making
